The cooks here are incredible, but they do seem to have an aversion to fresh fruits and vegetables. Don’t get me wrong, I love having tortillas and rice with every meal, it’s just that I’m beginning to fantasize about salads.

Let me know how you like Monterrey, Mexico. I want to visit and perhaps stay a while. What kind of work are you doing out there?

I certainly will! I’ve been once before and absolutely loved it. Like all big cities, it has its share of problems, but there’s still a lot of beauty to be found.
In terms of work, I’ll be serving as an intern for a nonprofit. We lead service projects for visiting philanthropy groups and churches, but the main focus is improving the quality of local group homes and orphanages.

I’d like to introduce you all to my home for the next month. Granted, I’m there to work, so I won’t have much time to gaze pensively out at the mountains or take cool pictures of the city below. But yeah, it’s safe to say that I’m pretty excited.
There is a catch, though: I’ll only have internet access for an hour per week.
Strangely enough, I think I can live with that.
